I did a little reading about that app apparently, it doesn't operate on the same principle as an IR thermometer rather it measures/estimates temperature based on colour so whatever it is you're measuring the temperature of needs to be black when cold. I vote for three different woods, I agree with Harry that too many colours would muddy the effect however only two colours would give too regular a look whereas three would allow for a somewhat random pattern which I think would be pleasing to the eye.
